Coriander Delfino Cilantro
Coriander Delfino is one variety of cilantro that grows to be 20 inches tall. When growing this type of plant, you can place your transplants in areas with full sun to partial shade. The soil, however, needs to be well-prepared with fertilizer already worked in. Like all varieties of cilantro, coriander delfino should be added every 12 to 18 inches in your garden.
Recipe: Chicken Soup with Cilantro
Although cilantro is found in many dishes, we have a recipe for it in chicken soup. Try this at home to add some variation:
2 lbs. skinless/boneless chicken thighs cut in 1" pieces
8 cups canned low-sodium chicken broth
1-1/2 lbs. of peeled russet potatoes cut into 1/2" cubes
3-4 lbs. carrots - peeled, cut into 1/2" thick rounds
1 1/2 tsp. ground coriander
1 15 oz. can drained golden hominy
6 chopped green onions
1/3 cup chopped fresh cilantro
5 Tbsp fresh lime juice
Place chicken, broth, potatoes, carrots, coriander in pot & bring to boil. Reduce heat, simmer 40 minutes or until chicken and vegetables are tender. Add hominy, onion, cilantro and lime juice. Continue to simmer for 5 minutes to blend flavors.
