Farmer Phil's Spearmint


As a perennial, spearmint can be planted in spring or fall to your garden. The plant can get to be 24 inches tall and conditions for growing should be full sun with some shade. The soil, additionally, needs to be well-drained but moist. In your garden, spearmint transplants can be added every 18 inches but are also ideal for containers.

2 cups moderately packed spearmint
2 cups Boiling Water
1/4 cup Lemon Juice
4 cups Sugar
3 oz. liquid pectin

Boil mint in water 30 minutes, strain. Add lemon juice and sugar bringing to boil. Add pectin and place in jars. Seal well.
